Winter just shouts Oxtail stew and this Oxtail slow cooker recipe is fantastic, it takes the better part of a day to cook so put it on to cook on Saturday for your Sunday lunch and give it a gentle heat about 2 hours before serving. The meat is incredibly tender and the combination of the coke and red wine do wonders. I found this recipe in Zhoozsh, Jeremy Mansfields recipe book, what a great buy, every recipe has a South African flavour and they are all pretty much hassle free to make, my kind of book. (Good for about 6 people)
What you need
4 medium onions chopped
1 whole Oxtail in chunks
4 tablespoons Olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
125ml Coke
125ml red wine
2 cubes beef stock
1 packet dry brown onion soup
1 liter water
The process
In a large pot on a medium to high heat, add the oil and onions, cook stirring every now and then for about 5 minutes or until the onions begin to brown on the edges. Toss in the Oxtail, a few at a time and brown them all over. Repeat until all the Oxtail pieces are browned.
Add in the salt, pepper and paprika and any remaining oxtail, stir, now add the coke and wine and simmer for 5 minutes.
Now you are ready for the slow cooker. Toss all from the pot into the slow cooker, crumble up the beef stock, add the soup powder, and 1/2 water, put the lid on and cook on low for 10 to 12 hours. After about 4 or 5 hours check to see the liquid level and add water if necessary.
Could it be any simpler?
Once cooked, switch off your slow cooker until about 2 to 3 hours before your meal. Give the mixture a gentle stir and reheat on low with the lid off.
Thats it, the very best Oxtail stew I have ever eaten. Serve it with mashed potatoes or pap.

The photo is clearly lamb stew…..or am I just a fool

Hi G, i made this, came out outstanding, But, how ever, i like to play around, made a few changes, added some italian mixed herbs, and some dried chilli flakes, OMW, now that was Superb, and also changed the wine. yum yum!
Thats perfect Raymond, make it your own. Happy 2012 and sorry about the late reply, just got back from vacation G
Hi Graham,
if I dont have a slow cooker could I use a pressure cooker instead?
Happy 2012 Candy, yes you can, probably use a little less liquid. Enjoy it G
Hi Graham
Please tell me is this recipe very oily, as I normally buy oxtail that has very little fat on but still find my sauce full of fat and have to either throw the liquid away or put the liquid in the freezer to remove the fat.
Hi Sharon, Oxtail is a naturally fatty meat so you will always get fat on the top but you can spoon it off without having to place it in the freezer. Never throw it away though! Happy days G
I had to put in some wortel & seldery as well, its my favourite… Jissie…
Thanks for letting us know Richard, cheers for now G
Absolutely delicious but a lot of gravy. I had to add it back to the pan and thicken with cornflour and reduce. Any help please.
Hi Judy, perhaps the amount of oxtail was a bit less than mine. I have changed the recipe to say add half the water and check after 4 hours or so to check the liquid level. The sauce should thicken up on it’s own. Thanks for letting us know, happy days G
Trying this dish tomorrow, sounds fantastic
Enjoy it Judy, have a lekker evening G
Going tp try it tomorrow sounds great
Hi Rodger, winter food at it’s best. Enjoy it G
Hi. You can also make the oxtail with a good dark beer. It gives the oxtail a different taste from the red wine version – almost creamy. Try it and let me know.
That sounds fantastic Irma, thanks so much for sharing, Do you mean something like a guiness?
Yes. But I made mine with good old Milk Stout. Also did a chocolate and dark beer cake. Oh, my word ….
Hi Irma, we forget about milk stout, thanks for the reminder. Beer and chocolate sounds very interesting, would love to give it a try. Cheers for now G
I made this oxtail in my slow cooker, and all i can say it was the best ever oxtail i cooked.
Thanks for a great recipe.
I’m so happy you enjoyed it, Oxtail is perfect winter food. Thanks for letting us know, have a fabulous day G
