There is nothing quite like a steaming beef stew in the winter and the real beauty is that you don’t need to spend ages in the kitchen. Its a meal in one pot that is seriously satisfying.
What you need
500g lean stewing beef like chuck
2 tablespoons flour
Pinch of salt and pepper
2 onions roughly chopped
1 teaspoon minced garlic
100g button mushrooms halved
25g tomato paste
2 carrots roughly sliced
2 potatoes large dice
2 cups beef stock
Oil for frying
The process
Cut the meat from the bone into nice size chunks, then take the flour, add a pinch of salt and pepper and sprinkle over the meat. This will aid in thickening the sauce and brown it nicely.
Add a little oil to a cast iron casserole or heavy frying pan and brown the meat on a high heat, remove and set aside.
Add the onions and garlic and brown slightly.
Add all the rest of the ingredients, including the meat, combine them well and place in the oven with the lid on at 180 Celsius 90 minutes.
if you are using a casserole disk, transfer everything to the casserole and place in the oven.
Check that the gravy is thick enough, if not take 1 tablespoon of Maizena in a little water, stir into the liquid and cook for a further 10 minutes.
Done, meal in 1 pot.
You can add any other root vegetables or beans, its up to you.
