egfgs in hell recipe

We recently visited a restaurant that we have been driving past for a few years, Cafe Dolci, and a few weekends ago we decided to stop in for breakfast. I had my usual eggs, bacon, mushrooms etc but my partner loves a little heat and saw “eggs in hell” on the menu. She enjoyed it so much that we ended up going the next day as well. Leave the chili seeds in if you like the heat or remove them if you want a mild heat. I also added bacon and parmesan shavings to mine.

Choose your bread wisely, lightly toasted ciabatta is perfect but I used Portuguese bread which I get from my local butcher.

Here is my version of “eggs in hell” that my partner really enjoyed 🙂 It is very simple to make and the sauce makes a nice little pasta sauce if you have leftovers, just add some fresh basil and you are away. You can also make a large batch of this sauce and keep it in the fridge just in case a few univited guests stop in over the holiday season.

This makes enough for 4 people.

What you need

1 x medium onion finely chopped
3 x tomatoes chopped
3 x red chillies finely chopped (seeds left in optional)
salt and pepper to taste
Eggs any way you like (we did poached eggs)
Parmesan shavings (optional)
Bacon (Optional for some haha, I Love bacon so not optional for me)
Toast of your choice (Ciabatta or Portuguese bread are best)

The process

In a pot over a medium to high heat, add about 2 tablespoons of olive oil,  add the onions and saute for 3-4 minutes until they start to soften.

Add the chili and cook for another 2 or 3 minutes until you can smell the chili.

Now add the tomatoes, stir to combine all of the ingredients, place the lid on the pot, reduce to medium heat and let it simmer for about 10 mintues. There will be enough liquid from the tomatoes. when you remove the lid the tomatoes should be soft. If they are not soft enough, just put the liod back on again and leave them to do their thing.

Remove the lid, season with salt and pepper, stir, taste and stir again. Place the lid on again and leave it to simmer while you make the toast and prepare the eggs.

Place the eggs on the toast, top with the beautiful red, hellishly hot tomato sauce and then finish off with bacon, parmesan or as it is.
