We have been eating late breakfasts as part of an intermittent fasting exercise during lockdown, for fear of really packing on the pounds. Brunch is a big meal which means we havn’t eaten for about 16 hours. We most often have a traditional style breakfast/brunch which I can personally eat for any meal, bacon, eggs, pork sausages, tomato, mushrooms and toast, or the creamy bacon and mushrooms breakfast.
This is a bit like a shakshouka in that it has the main elements and is done in a single pan, but you can pretty much do as you please to your own taste. I had a few left over cooked mushrooms from yesterday’s breakfast so just tossed them in. You could add green peppers, feta cheese, sausage pieces, basically, whatever your favourite flavours are.
If you have a pan that has a lid or a lid that will fit, thats ideal, if not you may need a little water to help cook the tomatoes to a soft consistency.
Its really easy, only uses 1 pan and tastes amazing. (for 2 people)
What you need
1 x tablespoon olive oil
1 x medium onion roughly diced
3 x large tomatoes, chopped
4 x strips bacon chopped
1 x medium chilli chopped (or a little chilli sauce) or to your taste
3 or 4 x eggs (depending on how many you want)
Salt and pepper to taste
Grated cheddar cheese
The process
In a pan on a medium to high heat, add the olive oil and cook the bacon for about 2 minutes or until it starts to colour a little.
Add the onion and cook until the onion becomes translucent.
Add the chilli and tomato, reduce heat to medium and cover the pan with a lid. Cook until the tomatoes are nice and soft. (give it a stir from time to time) and then season with salt and pepper to taste.
create a space for your eggs and crack the eggs into the holes created, sprinkle over the cheese and cover with the lid.
Let is simmer gently until the eggs are cooked to your liking.
Done and delicious.
