Close to Kentucky Fried Chicken
This is a take on Kentucky fried chicken which is pretty close I might tell you. We all get that ghalishing for KFC from time to time and there is just nothing else that will suffice. It’s a really great recipe and the best part is you can make up extra batches of the KFC coating and store it for quick access… when the KFC fred chicken bug bites, you just whip it out and away you go.
What you need
10-12 chicken pieces
3 cups flour
1 teaspoon paprika
2 teaspoon garlic salt
2 teaspoons onion salt
1 teaspoon dried oregano
1 teaspoon dried rubbed sage
1/2 teaspoon dried powdered rosemary
1/2 teaspoon dried powdered thyme
1/4 teaspoon nutmeg
1 teaspoon dried parsley
1 teaspoon salt
1 teaspoon black pepper
The process
Sift all the ingredients together twice to make sure that they are properly mixed.
Use deboned pieces of chicken, it ensures that they cook all the way through.
Dip the chicken pieces in milk or buttermilk and coat them in the seasoned flour. Set each piece aside and when you are done recoat each piece.
Deep fry in hot oil(not smoking) until golden and drain on a wire rack.
If you prefer to them in the oven, place them on a wire rack in a roasting pan and bake for 20-25 minutes on 180 celsius, turning each piece after 10 minutes.
I have been told that fried chicken from Kentucky fried chicken is not actually fried in oil at the KFC stores but done in a pressure cooker machine, so fried chicken is not really accurate, however, this fried chicken recipe comes out pretty close to the Kentucky fried chicken recipe.
Hi Graham,
Love it…..I cannot wait to suprise my hubby…but please tell me, if I chose to prepare it in the oven, can I drizzle some olive oil over the chicken pieces?
Sure you can Naveena, you probably won’t need it so try on a few pieces… you can always make more if you like it. In fact you will definitely be making more, so try it out first. Have a great weekend. G

Hello
I stumbled on this site by accident. Im 41 and have just taken over the cooking duties at home. I will feed seven persons daily and wanted something quick & simple and not the traditional Malay foods we’re used to. Thank you for recipes. The butter chicken was great! Its going into my collection!

Can’t wait to try this, but I always understood that meat with a bone in it cooks quicker not slower??
Not my experience, less bone, less time…
Hi, I tried this on the weekend and it was very good, however the only problem I had was finding the onion salt. Any ideas would be recommended. My next week treat will be one of the desserts. Will keep ypu posted. Thanks for a great blog. Happy Eating!!!
Hi renz, garlic salt will do the trick and is readily available. Most supermarkets do stock onion salt though.

Yahoooo another happy visitor. You are so welcome.
any ideas where I can get dried rubbed sage? been looking for it for a while at PnP, Shopr8 and Spar but in vain. I’m in Cape Town…
It can be difficult to find but Sp[ar usually have it. Otherwise just place the dried sage on a board and rub it with the back of a strong knife to form a powder. Cheers and enjoy
Divine….. the diet is broken, smashed!
If you are gonna break it, KFC is the way to go…. Life is a banquet!
Hi Graham
Please advise where I can get powdered rosemary and thyme (or what other alternatives)
Powdered is quite hard to find and easiest to grind dried herbs in a pestle and mortar. You can also rub them down with the back of a strong knife to powder them. Small pieces are not an issue in the recipe. Enjoy
