Close to Kentucky Fried Chicken
This is a take on Kentucky fried chicken which is pretty close I might tell you. We all get that ghalishing for KFC from time to time and there is just nothing else that will suffice. It’s a really great recipe and the best part is you can make up extra batches of the KFC coating and store it for quick access… when the KFC fred chicken bug bites, you just whip it out and away you go.
What you need
10-12 chicken pieces
3 cups flour
1 teaspoon paprika
2 teaspoon garlic salt
2 teaspoons onion salt
1 teaspoon dried oregano
1 teaspoon dried rubbed sage
1/2 teaspoon dried powdered rosemary
1/2 teaspoon dried powdered thyme
1/4 teaspoon nutmeg
1 teaspoon dried parsley
1 teaspoon salt
1 teaspoon black pepper
The process
Sift all the ingredients together twice to make sure that they are properly mixed.
Use deboned pieces of chicken, it ensures that they cook all the way through.
Dip the chicken pieces in milk or buttermilk and coat them in the seasoned flour. Set each piece aside and when you are done recoat each piece.
Deep fry in hot oil(not smoking) until golden and drain on a wire rack.
If you prefer to them in the oven, place them on a wire rack in a roasting pan and bake for 20-25 minutes on 180 celsius, turning each piece after 10 minutes.
I have been told that fried chicken from Kentucky fried chicken is not actually fried in oil at the KFC stores but done in a pressure cooker machine, so fried chicken is not really accurate, however, this fried chicken recipe comes out pretty close to the Kentucky fried chicken recipe.

Now this was some chicken dish!!! We absolutely loved it to bits!!! I opted for the oven version. It was scrummy. Served it with a rocket and avo salad with blue cheese dressing. Thanks!

i love this recipe.However i would add abit more salt. And i added some of the above spices in the broth when i cooked the chicken. Absolutely divine!

Where can a domestic low pressure fryer be obtained in S.A.? They are evidently common in the U.S. but unknown here.
That’s an excellent idea, then you can use pieces with the bone in and be sure they are cooked.

I have stumbled onto another KFC recipe – they cook the chicken in broth for 20 minutes, cool it down and then dip it in buttermilk and the coating to ensure that the chicken is cooked through.
