This is such a great winter dish which you will keep as a quick hearty dinner recipe for any day. Use left over chicken and remember when you make the Alfredo sauce to keep enough aside for this dish.(4 people)

300g chicken mince or chopped chicken breast
1 tin drained corn Kernels
300g Alfredo sauce (see bottom of page)

1/2 cup grated cheddar
The process
Add a little oil to a pan, add the chicken and fry until beginning to brown.
Add the corn and combine.

Hi Graham
Just to let you know this was a great hit at our ladies’ function and the guests wanted seconds and wanted the recipe!
I made it with low-fat evaporated milk instead of cream for a lower fat version (as suggested in my low GI recipe books)and it still tasted great.
Fantastic Anne-marie, always good to have a low fat substitute, in fact I was paging through a weight watchers recipe book last night and will be trying out a few… Summer is coming and the beach is calling… Thanks for letting me know G
Sounds great! I need to make something like this for a function. How many servings will one get from these quantities, please?
Hi Ann-marie, Finally back in beautiful Cape Town… This serves 4 people, but very simple to multiply out for many. Cheers for now G
Hi Graham
Can you substitute the kernel with something else?
Sure you can, try peas for a change. Have a great weekend. G
Can you substitute the cream with something else, like milk or yoghurt? I’m not a big fan of cream…
Hi Chanelle, you can use this recipe to substitute 1 cup
3/4 cup milk
1/3 cup butter or margarine, melted and cooled
Combine and whisk well.
Thanks Chantell.. I’ll post a new one later today.
This is such great recipes…Thanks so much, a life saver I would say!!
Keep them rolling in…
Agreed, but winter is nearly over… only 5 weeks left
Thats a great idea as my husband does shift work and there is nothing worse than coming home and having to cook just for one, when thats the case I would rather just have a snack but in winter its not that great one would rather have a hot meal.
Haha, I have been doing a bit of that lately!!
If you have some small casserole dishes, make a few and freeze them.
Once a again great recipe, they sounds easy enough to make even for one.
