Man is this a great chicken recipe. It’s from Nigella and was really simple and delicious and the ingredients may just help to burn some of that fat we are all putting on this winter.
What you need
1 lemon
2 onions cut into quarters
125ml Olive oil
2 teaspoons mustard powder
palm of dried sage
15ml Worcestershire sauce
Black pepper
1kg chicken thighs
1kg of your favorite sausages
Palm of fresh chopped sage
The process
Take a ziploc or similar sealable plastic bag, cut the lemon in half, squeeze out the juice and then drop the pieces into the bag. Add the onions, olive oil, mustard powder, dried sage, Worcestershire sauce, a pinch of salt and a good grind of black pepper.
Then add the chicken pieces to the bag, seal it and give it a good shake and a squeeze, ensuring that all of the chicken pieces are coated with the marinade.
Put the bag in the fridge for at least 1 hour to marinade.
Heat your oven to 200 Celsius.
Take a roasting pan and empty the contents of the bag into it and distribute the chicken and sausages evenly over the pan. (If you chose to use thighs with the skin on, ensure that the skin faces up). Sprinkle the chopped sage over the top and bake for about 1 hour, checking on it after 30 minutes and if necessary, turn the pieces.
When the top is golden and delicious remove from the oven and serve.
