This Italian favorite is a complete meal that takes 20 minutes start to finish. Have it on its own if you are watching your weight or with your favorite pasta.
What you need
4 chicken breast (6-8 thighs)
Salt and pepper for seasoning
1 large onion chopped
1 yellow pepper sliced
6 cloves crushed garlic (2 teaspoons)
2 tablespoon capers
Palm of chopped fresh basil
1 teaspoon dried chili flakes
2 tins chopped peeled tomatoes
2 large red peppers chopped
Season with salt and pepper and quickly color them in a hot pan with a little oil. Remove them from the pan and set aside.
In the same pan over a lower heat, add the onions, garlic, capers, yellow pepper, chili flakes, tomatoes with their juice and the red peppers. Give them a good mix to combine all the flavors and let the mixture simmer for 10-12 minutes.
This will soften the vegetables and reduce the sauce.
Return the chicken to the pan ensuring that they are covered with the sauce.
Cover the pan and let it simmer for another 7-10 minutes or until the chicken is cooked through.
