chinese chicken cashew nut recipe

Most of us who love Chinese or Asian style food will have ordered chicken cashew nut many times. We really love this chicken cashew nut recipe, it has a great amount of sauce and the chicken is really moist inside from being covered in corn flour (maizena) before cooking. It takes about 20-30 minutes start to finish and tastes incredible.

I always make a bit extra so that I have something ready for lunch the next day.

If you are having people over or have unexpected guests this is a really easy way to prepare a quick and delicious meal.

There aren’t as many pics as I usually take, it is literally that quick.

This serves 4 people

What you need

4 x chicken breasts cut into bite size cubes
2 x tablespoons corn flour (maizena)
1 x large onion roughly sliced
2 x green peppers chopped into 3-4cm pieces
1/2 cup cashew nuts (raw or roasted does not matter)
1 x teaspoon garlic salt
1 x teaspoon ginger powder

1/2 x cup water
1/3 x cup soy sauce
2 x tablespoons sugar (brown if you have)
1/3 cup oyster sauce (Not essential but makes a nice difference)
1 x tablespoon corn flour (maizena)
1 x tablespoon ground black pepper

The process

Place the chicken pieces in a bowl and spoon over the 2 tablespoons of corn flour. Mix it to coat the chicken peices in corn flour.

Place a large non stick pan on a high heat and add 1 x tablespoon olive oil.

Cook the chicken pieces until they are white on the outside with the odd bit of colour. The chicken will not be completely cooked through, you just want to cook the maizena basically to give the chicken a nice little jacket.

Remove the chicken from the pan and put aside.

Now add anothe tablespoon of olive oil, add the onions and cook for 1 minute, add the peppers and cook for another minute.

Now add the garlic and ginger and the cashew nuts and cook for about 2-3 minutes moving the mixture around frequently.

When you start seeing dark marks on the cashew nuts, pour in all of the sauce, mix it about a bit, reduce the heat to low and let it simmer for about 5 minutes, giving it a stir from time to time.

The chicken will cook through and remain moist inside and all of the ingredients will have a beautiful shiny coating of delicous sauce.

I served this with brown rice for a change which was really nice but noodle or white rice are just as good.
