Peanut butter cookies
OK folks, these little fellas are just the most fantastic cookies to have around. My Mom’s housekeeper of about 30 years has been making them almost as long as I can remember and they seldom see out the day, so I cannot tell you how long they will keep, which is good right? Yes, very very good. (makes about 3 dozen)
What you need
125g butter at room temperature
2ml vanilla essence (1/2 teaspoon)
1/3 cup caster sugar
1/3 cup brown sugar (I use treacle sugar)
1/3 cup crunchy peanut butter
1 1/4 cups all purpose flour
1 teaspoon bicarbonate of soda
The process
In a bowl, add the butter, peanut butter, brown sugar, caster sugar and vanilla essence and beat until smooth and creamy using an electric beater or do some heavy duty whisking.
Sift the flour into the mixture and add the bicarb of soda. Mix together with a spoon using a folding motion until uniformly combined, dont beat, just mix.
Line a baking sheet with grease proof paper and take heaped teaspoons of the mixture, form a ball, place them on the baking sheet and flatten slightly with a fork to create a criss cross pattern (the little mounds get really crunchy, so do it, it’s worth the extra few seconds). Leave about 4 or 5 cm around each cookie to allow for spreading and rising.
Bake in the middle of the oven at 180 Celsius for 15 to 20 minutes until golden brown.
Remove from the oven and allow them to cool and crisp up then get a DVD, stay out of the cold and ย enjoy! Life has so many simple pleasures!

Hi Graham,
I must agree , these little peanut butter cookies are fantastic. I do have the same problem with them not lasting too long at all. Once the smell is in the air, my kids start hovering around the kitchen, i battle to even let them cool down. Have a great day
Hey Dean, I know the feeling… keep a little stash out of reach… I do. Cheers G
Hi Graeme
I now bake these cookies at least once a week, and not 1 person ive offered them to has turned me down yet ๐ This site is so helpful and it encompasses all of the areas in cooking – you put a lot of effort into this site and I just wanted to say thank you! From 1 food fundi to another

Fantastic Renz, just love the smell of freshly baked biscuits, you are welcome. G
Hi Graham
Can I use normal white sugar instead of castor and use a coffee grinder and really get it fine or must it be castor sugar? Thanks
Hi Renz, that will work just as well, only measure after you have ground the sugar. Enjoy them G
Can not wait to try this. Baked your jam cookies earlier this afternoon and my family finished it all in a hour. Many thanks for another great recipe
Thanx for a great recipe!I made it for my family and now they are hooked ๐ its such an easy recipe and tastes so good!
You are welcome Jennifer, so glad you enjoyed and thanks for letting me know. G
I made these (easy as pie) but they didn’t last very long …. the peanut butter police polished them off!!
Well done on another great recipe!
haha… I know what you mean, they seldom last a day at my place. G
What’s all purpose flour? Sorry for the noob question, I want to surprise my girlfriend by making these on my own…
Just regular flour like cake flour, not self raising flour, enjoy them and welcome, we love new cooks… Cheers for now

Hi Graham
Can I add pecan nuts to these and if I have smooth peanut butter can I substitute that?
Thanks for the wonderful recipes ๐
Hi Renz, I cant see a problem with that, break them up into small pieces or blitz them in a blender, mix them into the peanut butter before you measure it out. Have a great weekend G
