chococolate chip cookies

Choc chip cookies

These are really good but you may have to hide a few if you intend to get your hands on them yourself. There are so many choc chip cookie recipes around but few are as chocolatey as these double choc, choc chip cookies.

What you need

1 ½ cups flour
¾ cup cocoa powder
1 ½ cups treacle sugar
180g butter in cubes
150g dark chocolate
3 eggs beaten
1 ½ cups chocolate drops

The process

Lightly oil 2 baking trays and line with grease proof paper (the oil helps the paper stick) and heat the oven to 180 Celsius

Sift the flour and cocoa powder together into a large mixing bowl, add the sugar, give it a stir and make a well in the center.

In a small pot, melt the butter over a low heat, add the chocolate and stir until the chocolate has melted and add to the flour mixture, add the eggs and stir to combine. Now add the chocolate drops and stir to distribute evenly.

Take a tablespoon of the mixture and drop onto the trays using your finger to scrape it off, with about 5 cm between each one.

Bake for 8-9 minutes and allow to cool on a wire rack before setting the family on them.
