tortillasTortillas are really great for anytime meals and you can really go to town with them. Fill them with chicken, meat or vegetables, add cheese, avo or anything you have in the fridge that grabs your fancy. A really great alternative is to fill them and then smother them in a tomato pasta  sauce and cheese and place under the grill to melt the cheese. They freeze well, so make 2 batches and always have a quick meal at hand.

What you need

2 cups regular flour
1 1/2 teaspoons baking powder
1 teaspoon salt
2 teaspoons cooking oil
3/4 cup warm milk

The process

Sift the flower into a large bowl with the baking powder and salt.

Add the milk and oil and mix with your hands to for a stiff dough.

Lightly flour a surface, tip the dough onto the surface and knead the dough well for 3 or 4 minutes.

Place the dough back into the bowl, cover with a clean cloth and leave it to rest for about 20 minutes or so.

Now, lightly flour a surface and separate the dough into 8 or 9 equal portions. Use a rolling pin to roll it out very thin in a circular shape.

On a medium heat, heat just enough oil to coat the base of a large pan, place the tortilla into the pan and cook until bubbles start to form, turn it over and cook for another 2 mintes or so.
