Easy Tortillas

I really love Totillas to wrap up left overs with a few salad greens or to serve as a festive sharing kind of lunch so here is a tortilla recipe that makes 10 tortilas.
What you need

1.5kg white bread flour (cannot be substituted with regular flour)
2 teaspoons salt
300ml luke warm water

The process

Place the flour and salt in a bowl and gradually stir in the water until you have a soft dough. It must not be sticky.

Turn it out of the bowl and divide into 10 equal portions.

Flour the surface of your counter and roll out each piece to 15-20cm circles. They should be 1-2mm thick.

Heat a non-stick pan to medium and cook for about 1 minute on each side. There will be brown spots on the tortilla and they will puff up slightly in places.

Place on a wire rack and cover with a clean cloth while you cook the rest.

They will keep for 10 days or so in the fridge.

There is so much you can do with a tortilla, even the left over filling from a chicken pie is great in a tortilla.
