These are really nice just on their own as a snack or as an accompiniment to a roast or stew, just remember to season them well.
What you need
1 cup olive oil
50ml lemon juice
3 cups water
Peel and halve the potatoes and cut into 1cm slices.
Place all of the sliced potatoes into a roasting pan, season with salt and pepper and dust with oregano. Pour the oil and lemon juice over the potatoes and mix them up with your hands, coating all the pieces, add 3 cups of water to the pan.
Cook at 160-180 celsius for about an hour.
