
There is little as satisfying as a rich and spicy soup that has these little gems of flavor just under the surface. This is a Czech version of a favorite winter warmer.
What you need
250g cubed beef (use a good quality steak)
2 large potatoes diced
1 onion, finely grated
1 teaspoon crushed garlic
50g tomato puree
1 tablespoon paprika
A pinch of cumin and dried marjoram
2 liters beef stock
Oil for frying
The process
In a large pot on a medium heat with a little oil, add the potatoes, onions and garlic and cook until the garlic is beginning to brown.
Add the cubes of steak and brown. Just toss them around until they look good.
Add the paprika, cumin and marjoram, and cook for a few minutes to release the flavor of the paprika.
Add the tomato puree and beef stock, bring to the boil and then allow to simmer with the lid off for about 20 minutes.
Skim the top before serving with chunks of warm fresh and crispy bread.
You can add a dollop of fresh or sour cream before serving.
