I have had so many requests for Christmas recipes again this year that I thought I would re-post the whole lot in one entry. Some of my best memories are around the table at Christmas time with the table groaning under all the delicious things to eat. It is so worth taking the time and putting in the extra effort to make Christmas dinner or lunch something really extraordinary, it is something that you and all your friends and family will remember for years to come.
There are also a few recipes that are fantastic to make as Christmas gifts like shortbread or cookie hampers, a little effort in the kitchen making Christmas presents is always appreciated and of course a lot less expensive.

Hi there Graham, I bought a rolled deboned turkey in netting from Woolies and was wondering what I could do to “spruce” it up a bit and what sort of gravy can I use, seeing as the instructions are just to boil it to heat it up? The turkey is already cooked. What suggestions do you have? Many thanks.
Hi Yvonne, I would simmer it water that has a 1/2 onion a carrot cut up, a few sticks celery chopped, a few peppercorns, to heat it and make it nice and moist with a bit of flavour. For the Gravy you will need for every 4 to 5 people – 3 tablespoons butter, 3 tablespoons flour and 300 – 350ml beef/chicken stock. Heat the butter on medium until foamy, add the flour and whisk to make a roux (be careful not to brown it) then add the beef stock and whisk to a nice consistency, taste and add pepper, onion powder/garlic powder and salt to taste. Hi Yvonne, this recipe is a mainstay for me for lamb and although it’s a shoulder roast, a leg will work just perfectly. I like my lamb cooked and tender!

hay there, i would like to know since its my 1st xmas making gammon..i bought a glazed gammon by accident. can i still cook the gammon and put over my own glaze?or how can i go about preparing the glazed gammon i already bought? but i’d prefer to use my own glaze..if possible
Hey Brigitte, You can prepare your own glaze, this will only enhance the flavours but as its pre made I would follow the cooking instructions given. Just a hint, marmalade makes a great glaze… Merry Christmas.
