Here is something really homely and heartwarming. It takes a while in the oven but just a few minutes to prepare, perfect for weekend wintery dinners, just let it cook and fill the house with delicious smells. It’s so simple you wont believe how great it tastes.(4 to 5 people)
What you need
8 skinless chicken thighs
2 medium onions sliced
4 slices bacon chopped
4 tablespoons lemon juice
3 tablespoons white wine vinegar
1 chicken stock cube
1 cup hot water
1 teaspoon sage (if using fresh sage, 3 teaspoons)
1 teaspoon rosemary (if using fresh rosemary, 3 teaspoons)
2 tablespoons maizena
salt and pepper
The process
Heat the oven to 180 Celsius and get out a casserole dish with a lid.
Place the chicken pieces in the bottom of the casserole dish, sprinkle over the bacon and onions.
Mix the lemon juice, vinegar, hot water, stock cube and the herbs and pour over the chicken.
Place in the oven for about 45 minutes and then mix the maizena(corn flour) with a little water, about 3 tablespoons and mix into the liquid in the casserole dish and season with salt and black pepper.
return to the oven for another 15 minutes or so.
Thats it, done.
Serve with rice or bioled baby potatoes or this warm potato salad

Hi Jack, 45 mins should be perfect, all I can think of is that perhaps 180C on your oven is a bit lower.. Sorry to hear that Jack, perhaps pop it up to 200C and remember you can happily pop it back into the oven again. Cheers for now G
Thanks Graham, being Jewish I know about macon, but I also know about bacon (don’t tell anyone) and there is no similarity between the two, believe me. Will try some smoked chicken – will let you know how it turns out.

I know what you mean, was in the guesthouse business for quite a few years and often needed Macon…. just not the same. It needs to be something with a strong salty flavor, so if you find something that works let us know. Cheers for now
You could try something like capers for the saltiness. Would change the flavour somewhat, but could be pretty good.

I am absolutely loving this site. These are all my kind of recipes. What would you suggest I use instead of bacon? We don’t eat pork and I always get disheartened when the ingredients include bacon. I just usually pass on those recipes, but this sounds so easy and yummy.
Hi Zelda, glad you like the site. Bacon can be substituted with Macon which is made from beef or you could use smoked turkey or smoked chicken. Bacon is a very difficult thing to substitute for it’s strong flavor but if anyone else has a suggestion, please let us know.
I am just loving the chicken dishes, don’t get me wrong I do like red meat but this is still my favorite.
