Poor mans paella is not wat it sounds like, its rich spicy and delicious and a treat on cold winter days. This recipe has become one of our favorites and it’s easy to make your own. Spice it or not, add what you really like.
What you need
4 large chicken breasts
pinch od salt and pepper
1 large onion chopped
1 red pepper chopped
1 green pepper chopped
1 taespoon chopped garlic
chili chopped (to your taste)
1 cup basmati rice
300ml chicken stock
50g tomato puree
Paprika (1 teaspoon or to your liking)
halve the chicken breats, season with salt and pepper and color on both sides in a pan with a little oil, remove and set aside.
Then cook the onion, peppers, chili and garlic until the peppers are soft.
Add the rice to the cooked peppers and combine, add the chicken stock, paprika (smoked paprika is fantastic in this dish) and the tomato paste and about 150ml water.
bring it to the boil, reduce heat and let it simmer for about 3-4 minutes. Add the chicken pieces, cover and cook on a very low heat for another 20 minutes.
The rice should have absorbed all the water and the chicken should be cooked, tender and moist.
