
Chicken cottage pie
This chicken cottage pie is another one of those hearty home meals that will soon become a family favorite. Its quick and easy and you can flavor it with whatever vegetables and herbs you have on hand. Chicken mince make economical meals and it is just so easy to make. It keeps well in the fridge for a few days, so for those who need a few single meals, send it! (4 people easily)
What you need
500g chicken mince
1 large onion
2 finely chopped carrots
1 tablespoon flour
1 tablespoon tomato puree
300ml chicken stock
salt and pepper
pinch thyme
1kg potatoes mashed with butter and milk(salt and pepper the mash well)
grated cheese for topping
The process
Prepare the mash by cutting the potatoes into small pieces, boil until soft, drain off the water, add a good knob of butter and a splash of milk, then mash well.
Fry the chicken mince, onion and carrots together for about 5 minutes.
sprinkle over the flour and stir for 2 minutes
mix in the tomato puree and chicken stock and simmer on a low heat for 15 minutes, then add the thyme and the salt and pepper.
Place the chicken mixture in an oven dish, spoon over the mash and top with the grated cheese.
Place it in a hot oven of 200C for 20 minutes, thats it, easy, hearty, tasty and economical.
Serve with a salad or add peas to the mixture for some greens.

Hey Sammy, I’m sure you should be eating up a storm, I’ve have been lucky enough to have 4 kids.. and seem to remember endless running around for food and a few other odd things. i’m sure this will be delicious, but i must say when I saw the chicken mince at Pick n’ Pay I was surprised and I asked my boyfriend how does it get to be when it’s in the pot, but when you can make a cottage pie i realise it couldn’t be that bad i’m gonna try it.
Hi Lungi, chicken mince is great for so many things, I often make burgers with chicken mince. Use it in place of beef mince for almost anything with lots of fresh herbs. Enjoy it G

My daughter’s 15 month’s old and she’s on solids already, I do cook for her those gem squashes, butternuts, sour milk mixed with bread, sweet potatoes but when it comes to those processed veggies she doesn’t want anything to do with those. I was wondering if you have any recipe’s for her food because i’m now running out of ideas. she loves sweet food but i don’t think that’s very good for her. Please help me out here.

Hi Lungi, I would suggest you add a little fruit that has been softened to the vegetables like pear or apple to sweeten it up a little for her. The best is to steam fresh veg and fruit and then blits them in a blender or press them through a sieve to get them reasonably fine. the addition of fruit shoul make her quite happy to eat almost any vegetable, just experiment a little with the amount of fruit you add, and of course get ripe fruit that is nice and sweet. Hi Lungi be grateful that your daughter does not like bottled veges. In any case they have a synthetic taste and when you do introduce your daughter to veggies she will refuse. I used to cook bulk veggies at the weekend and put them into containers. Cook chicken feet and the gelatin that comes from this, mixin with the
veges. My daughter has lovely healthy hair and nails. Also add a little bit of Marmite. Hope this helps and good luck.
G … the chicken Paella was absolutely divine. Lovely and spicy only problem the rice was still uncooked by the time all the liquid was absorbed and being in a hurry I just served it. I did not have Basmati and used Speko white rice is that why? I had to place it all back in the pan and re-cook. Is the rice supposed to be a little undercooked?.
Hi barbara, no the rice should be fully cooked. It’s possible that speko needs a bit longer.. next time give yourself a little taster first. Cheers G
