100g mushrooms sliced
2 Tablespoons) flour
1 ½ cups Milk
200ml chicken stock
500g poached chicken in bite size pieces
splash of cream

2 tablespoons sherry(if desired)
3 tablespoons butter for frying
The process

Remove from the heat, add the milk slowly and stir constantly, add the stock, bring to the boil and stir until smooth and quite thick.
Add the chicken and cream(not essential) and season with salt and pepper and finally, if you want the sauce really rich add the sherry and combine it all.
Serve with pasta or rice.
G? …. often one finds that you have all the ingredients save for the cream and you want to get stuck in without running to the supermarket. Would if be OK to perhaps store say Ideal Milk in the grocery cupboard and use that as a substitute?
Hi there, nice thought but it will really not work very well, cream is really unique ingredient. It actually keeps for a long time in the fridge, next time you are in the supermarket check the best by date and add a week or so…

I’m going to try out your recipe. catering for 16 people and was wondering if cooking the chicken in a slow cooker beforehand will do?
Hi Jackie, That would be just fine, you want the chicken cooked and ready for shredding or chopping. Enjoy it. G
Awesome meal. I make this one for my 2 year old son and just add a little bit of greens (peas) to it. H absolutely loves it. I use the same recipe when preparing dinner for my wife, I just add ‘n little bit of white wine.
