This is simple, quick, healthy and classic Italian.
What you need
4 chicken breasts
6 cloves garlic crushed
Palm of chopped parsley
Salt and pepper
Juice of 1 lemon
Olive oil
The process
Take the chicken breast and butterfly them, then place between cling film and flatten gently with a rolling pin or mallet (they should be abot 1cm thick).
Mix together 4 cloves of crushed garlic, parsley, lemon juice and a generous amount of olive oil. Smear this onto each side of the chicken and leave to marinade for 10minutes.
Heat a grill pan and place the chicken inside down first and cook until almost cooked through, then turn for 1 minute. Be careful not to overcook.
Boil the spinach for about 3 minutes in water, remove and drain thoroughly. Add olive oil to a hot pan and 2 cloves of the crushed garlic, add the drained spinach and combine, remove from heat.
Place, caramelized side up on top of spinach.
