apple fritters

These remind me so much of my childhood and I remember distinctly how they would be consumed the instant they came out of the pot. Definitely not for weight watchers, but then we all deserve a treat from time to time. This is an old fashioned recipe and Oh so well worth it.

What you need

1 teaspoon sugar
125ml warm water
1 packet yeast
125ml milk
125ml cold water
15ml sugar
10ml baking powder
2-3 large apples chopped
Yolks and whites of 3 eggs separated
750ml flour

The process

Dissolve the sugar in the warm water and add the yeast and let it froth – it must do this.

In a bowl mix together the egg yolks, milk, water and sugar. Now mix in the yeast mixture, add the fruit and then lightly whisk the egg whites and fold them into the mixture.

Sift in the flour and baking powder and mix to a heavy dough.

Set it aside until the mixture has doubled in size.

Heat oil for deep frying, not too hot or they won’t cook through properly.

Drop large spoonfuls of the mixture into the oil and remove when golden and crisp.

Dust them with caster sugar and have your way with them.
