Amaretti biscuits

These are those little biscuits you often get on the side of your coffee from a really good Italian coffee shop with a wonderful cinnamon and almond flavor.

What you need

1 tablespoon flour
1 tablespoon Maizena
150g caster sugar
1 teaspoon cinnamon
1 cup fine ground almond
2 egg whites
Icing sugar to top

The process

Lightly butter and line a large baking tray with grease proof paper.

Beat the egg whites with an electric beater until firm (if you turn the bowl upside down the egg whites should stay put). Add 75g of caster sugar in 3 batches, beating well in between until the misture is smooth and has a sheen.

In a separate bowl, sift together the flour, maizena, cinnamon and the other ½ of the caster sugar. Add the almond gorunds and combine well.

Now add the egg white mixture to the flour mixture and fold in gently with a metal spoon until evenly distributed and streaky. Don’t over mix it.

Make little balls of the mixture and place them on a baking tray allowing room to spread and sprinkle a generous amount of icing sugar over the top of each ball and bake in a 180 Celsius oven for about20 minutes or until crisp and golden brown.

Allow to cool on a wire rack.
