Condensed milk fudge
During the holidays, my kids often make things to sell to the neighbourhood and this one is a winner every time. For a little something extra and double the price, cover ithe fudge with a thin layer of chocolate like in the chocolate caramel slice.
What you need
800g sugar
250g butter
250ml milk
250ml condensed milk
10ml vanilla essence
The Process
Simmer sugar, butter and milk together over medium heat, in a medium sized pot, until the sugar dissolves.
Stir in the condensed milk and boil for 40 mins, stirring constantly.
Remove from stove and beat in the vanilla essence with an electric beater on slow while it is very hot. Continue beating on a higher speed until the mixture is thick and foamy.
Pour the fudge mixture into a shallow backing tray, lined with grease proof paper.
Allow to set and cut into squares.

can i use less or no sugar at all?
Hi lana, you need the sugar to help crystalise the fudge. It’s a great recipe and I wouldn’t change it but feel free to experiment.. Have a great weekend G
Is it possible to make chocolate fudge with this recipe by adding cocoa? Have you ever tried this and if so how much is required.
Hi Jeanne, I can’t see any reason why not, add cocoa a teaspoon at a time while beating until you get the desired chocolatiness(is that a word?). Please let us know how it works out. Cheers for now G
I made the fudge and my o my – I have received compliments from whoever had a piece or two(and more).I told my sister about the recipe, she also made it and said its the best fudge she has ever tasted.My husband will not buy fudge at the shop anymore – only this fudge will do.Thank You for sharing the recipe!

Please help, how do I prevent fudge to go “sugary” (sand suiker) in Afrikaans. I made it so far 3 times, 1st time perfect, 2nd less perfect and the 3rd time, what a flop!
Hi Selwyn, sugary would indicate that the sugar has not properly dissolved. You should be a little more patient and make sure that every last bit of sugar is dissolved. Pour a glass of something, put the music on and never rush yourself… have a fantastic time G

I think I might not have simmered it long enough.
If this is the case, can I still rescue the fudge? 🙂

Hi Robin, should take about 30 to 40 minutes to set properly. mmm once its cooled it is unlikely you will be able to rescue it completely but is worth a try. Break it up and reheat, the danger is that it could burn now and then beat it again. It may be salvageable so give it a go. Good luck G
