
Coconut Jam Slice
Slices are really great, you will be hard pressed to pass a tin of these in the kitchen! koo recently reminded me of these and whilst I’m stocking the cookie jars, I’ll make a batch.
What you need
1 ½ cups flour
1 teaspoon baking powder
150g butter chilled and cubed
½ cup icing sugar
1 egg yolk
3 whole eggs
½ cup caster sugar
3 cups desiccated coconut
Jam (strawberry/Apricot)
The process
Lightly butter and line a baking tray with grease proof paper.
Sift the flours and icing sugar with the baking powder twice into a bowl (important to do it twice).
Add the butter and crumble with your fingertips until all of the flour is combined with the butter and the mixture is fine and crumbly. (a bit like if you are making an apple crumble topping)
Add the egg yolk and mix with a metal spoon in a cutting motion until evenly distributed and combined.
Pour out onto the baking tray and spread evenly over the tray, pressing it down firmly, then into a 180 Celsius oven for 10-15 minutes or until lightly browned.
Set aside to cool and then spread a generous amount of jam evenly over the top.
With an electric beater, beat the caster sugar and eggs together until it is rich and creamy. Add the coconut and mix together until well combined, then cover the jam evenly with a thick layer.
Bake again for 30 minutes at 180 Celsius until the coconut is browned.
Allow to cool before cutting into pieces.
These are really worth the effort!

What size baking pan width and depth please
Hi Renz, the baking trays I use are about 500mmx400mm or there abouts. You don’t have to fill the tray but start on the short side and get as far as you need to. Cheers for now G
can you use self raising flour?
I’m sure you could, just leave out the baking powder… never tried but let us know how it works out. Great weekend koo. G
