leek and potato soup

Vichy sois soup in winter is a must have, it is thick, creamy, healthy and delicious.

What you need

2 Tablespoons butter
2 Tablespoons oil
4 leeks thinly sliced
500g potatoes peeled and cubed
1 litre chicken stock
1/2 cup milk
Salt and pepper to taste
Splash of cream

The process

In a large pot on a medium heat, add the oil,butter, leeks and potatoes and cook them with the lid on for about 5 minutes, stirring from time to time.

Add the stock and simmer for about 20 minutes until the potatoes are soft.

Blend in the pot if you have a hand blender until smooth. If you have to do it in a blender wait for it to cool a little. Add the milk and blend until smooth, add salt and pepper and blend together

Serve hot with a splash of cream, a grind of black pepper with a few croutons.
