This is the first of some quick, tasty and really delicious summer salmon recipes. Including the marinating this will take you 20 minutes. Most supermarkets have great fish counters these days and it’s perfect for a quick healthy dinner on the patio.
What you need
4 150-200g salmon fillets
1 teaspoon chili sauce (use sweet chili sauce if you don’t like the bite)
juice and zest of 1 lemon
1 teaspoon honey
Good grind of black pepper
Coriander leaves
The process
In a bowl, grate the zest from the lemon and then squeeze out as much of the juice as you can, you need about 40ml or so. Add the honey and chili sauce and a good grind of black pepper and then mix it thoroughly.
Place the salmon in a dish, pour over the marinate, turning the salmon to ensure both sides are coated. Let it marinate for 10-15 minutes.
Heat a non-stick griddle pan if you want the stripes(it looks impressive) and cook for 2-3 minutes on each side. You will know they are done when the colour on the sides goes light pink.
Serve it with a nice fresh salad and boiled baby potatoes tossed in a little butter with some chopped parsley.
