bacon and mushroom sauce

This is a classic sauce for those who love bacon, it’s rich, creamy and the smells coming out of the kitchen are sure to make any not so hungry kids, starving. The smell of frying bacon just seems to have that effect! It is best served with penne, which holds the sauce in the ridges, but any pasta will do.

What you need

4-500g penne

Olive oil for frying
1 large onion very finely chopped
1 heaped teaspoon garlic crushed (about 3 cloves)
1/2 packet bacon chopped into small pieces
1 punnet mushrooms chopped into small pieces
350 ml cream
50g grated parmesan cheese

The process

heat the oil on a high heat and toss in the bacon, onion, garlic and mushrooms and cook for about 5-10 minutes or until the bacon is cooked. Add the cream and stir constantly until it is bubbling and remove from the heat. Add the warm cooked pasta and the parmesan to the pan and toss thoroughly.

Serve with a simple side salad.
