This prawn dish is such a great little starter and can also be doubled and served with chinese egg noodles or rice as a main. It’s really light and healthy.
What you need
2 tablespoons crushed garlic
2 tablespoons finely grated onion
1 red pepper finely chopped
1 green pepper finely chopped
Good splash of olive oil
1 dried chili finely chopped
1 tablespoons tomato puree
2 teaspoons honey
500g frozen prawns
pinch of salt
In a pan over a medium heat with a little olive oil, saute the onions and garlic. Add the dried chili and tomato puree and combine well.
Add the honey and let it simmer for about 1 minute.
Add the prawns in their frozen state and simmer, stirring occasionally until the prawns are heated through.
Remove the prawns, add the chopped peppers and allow the remaining sauce to reduce by about 1/3.
Add the shrimp back to the mixture and toss around to coat evenly.
That’s it, the peppers are still crunchy and the prawns are sweet and spicy.
