Winter is the time for comfort food and this recipe is just what you need. There is something very comforting about watching the steam rise from a hot bowl of this really delicious recipe. It takes about 10 minutes to prepare and 50 minutes in the oven, simple and straight forward.
What you need
8 skinless chicken thighs
1 tin chopped peeled tomatos
200g tomato puree
1 packed brown onion soup
palm full of fresh basil
1 stock cube
Brown the chicken pieces in a hot pan and place them in your casserole dish.
Mix all the rest of the ingredients together and cover the chicken pieces with the mixture.
Cover the casserole dish and place in a 180 celsius oven for 50 minutes.
You are done.
Serve with either rice, mash, pasta or a nice warm Italin bread….. . Enjoy
