I just love chicken with any spicy sausage type meat and have made this with chorico or bacon in stead of the salami and it’s just as good each time.
What you need
8-10 chicken thighs
8-10 baby onions
½ cup marsala/red wine
½ cup tomato puree
Pick of ground black pepper
About 100g of chopped salami
In a large pan, heat some oil for frying and brown the chicken pieces and onions. Add the wine and bring to the boil, then let it simmer until the wine is reduced by about half.
Add the pepper and the tomato puree, stir well and simmer with the lid on for about 20 minutes.
Remove from the heat and stir in the salami and parsley and let it stand for about 5 minutes before serving.
If you are using bacon cook it with the chicken and onions,
Serve with some gently steamed mixed vegetables and a nice warm crusty bread.
