date loaf recipe

Winter is baking time, I really love the smell of baking coming from the kitchen and if you are following this site you may need to get a gym contract.

What you need

375ml boiling water
250 chopped dates
2 tablespoons butter
350g flour
pinch of salt
1 teaspoon bicarbonate of soda
2 teaspoons baking powder
200g sugar
1 egg
5ml vanilla essence

The process

Soak the dates in the bioling water and butter while you prepare the ingredients.

Sift the flour, salt, bicarbonate of soda and baking powder into a large bowl, make a well in the center, add the sugar, egg, vanilla essence and soaked dates. Thoroughly mix until it is well combined.

Grease a 23cm loaf tin with butter and add the mixture.

Place in a medium oven 180 celsius for 40 minutes and then reduce to 160 for a further 15 minutes.

Turn the loaf out onto a wire rack and let it cool for as long as you can resist. If you cut while still very hot it will crumble.

A perfect teatime treat.
