vegetarian spaghetti

This is a colorful vegetable stir fry that is really fantastic with tagliatelle or spaghetti.

What you need

1 carrot thinly sliced
4 or 5 baby marrows
½ punnet of mushrooms
2 seeded and sliced tomatoes
broccoli
1 onion chopped
400g tagliatelle
3 tablespoons olive oil
1 teaspoon grated ginger
2 tablepoons dry sherry
6 tablespoons yellow bean sauce

The process

Cook the pasta, drain and set aside.

Slice the carrot and baby marrows diagonally about 1cm thick, cut the mushrooms in half and cut the seeded tomatoes into 8ths.

To a hot pan/wok add the ginger and garlic and stir around for 30 seconds, add the vegetables and stir fry for 3-4 minutes, add the bean paste and stir for 2 minutes.

Add the spring onions, sherry and pasta and mix well for 1-2 minutes.

You’re done!!
