Bacon and lentil soup |

I hav’nt been eating enough veg lately and wanted to try lentils, so I made this soup from what I remember being really tasty and was not dissapointed. It was so morish I had to tell myself more than once to leave a bit for tomorrow.


What you need

1 cup brown lentils
750ml chicken stock
75ml tomato paste
half a packet bacon
2 small dried chilies

The process

Put 1 cup of lentils in a large pot with 1 liter of water, bring to a boil and then reduce heat and simmer for 40 minutes. DO NOT ADD SALT.

While the lentils are cooking chop the bacon into small pieces and fry in a little oil until cooked, not crisp and set aside.

Make 750ml chicken stock, chop up the chilies and place into the stock.

When the lentils are cooked, add them to the stock on a gentle simmer, add the tomato paste, stir well and simmer with the lid off until the liquid level reduces to the point where the top layer of lentils are just below the surface. Give it a stir every now and then.

Add the bacon, stir and simmer for about another 5 minutes.
