
Winter getting you down? Perk up your day with this colorful, healthy and delicious fruit and veg salad mix. Here are 2 fantastic dressings for a healthy and filling lunchtime meal salad with a difference.
What you need
1 red pepper
1 yellow pepper
1 green pepper
1 apple
1 red onion
a few baby corns
pineapple
Ginger honey dressing
Mix together
1 teaspoon finely grated ginger
1 teaspoon crushed garlic
Juice of 1/2 lemon
1 teaspoon white vinegar
2 tablespoons olive oil
1 tablespoon honey
1 teaspoon soy sauce
Honey mustard dressing
Mix together
75ml mayonnaise
15ml mustard powder
squeeze of lemon juice
1 tablespoon honey
pinch of salt and pepper
The process
Chop up all the vegetables into bite size pieces and toss together in the dressing of your choice.
Simple, colorful, heathy and delicious, what more could you ask for.
This is not a weightwatchers meal but I am sure it would fit.
