matriciana pasta sauce

Tomatoes, chilli and bacon, you just can’t go wrong. This is a failsafe for unexpected guests or late night meals that takes just a few minutes.

What you need

1 onion finely chopped
½ packet bacon thinly sliced
1 tin chopped peeled tomatoes
1 chopped red chilli
Olive oil

The process

Fry onion and bacon in a little oil until the onion is transparent, add the tomatoes and chilli and simmer for covered for about 5 minutes.

Done, serve with any pasta you have in the cupboard and grate over parmesan or pecorino cheese.
