
Liver and Onions
Someone asked me a while back about kidney dishes, and although I am not mad for off, I decided to try this liver with onions dish. It was really tasty and very rich but I will definitely make it again as a starter or meze type meal. I will also add a bit of chili next time.
What you need
500g calfs liver
Flour
3 large onions sliced
1 heaped tablespoon butter
3 tablespoons olive oil
Salt
Pepper
Chopped parsley
The process
It is important to remove the skin from the liver ( be patient and use a very sharp knife)
Slice into thin strips as if you were making a stir fry. Place about a cup of flour in a bowl and add the liver strips then pour the whole lot into a sieve and shake it about to coat the pieces well and the excess flour will run out.
Add the butter and oil in a large pan over a medium heat and cook the onions until they are soft and remove from the pan.
Add a little extra oil, add the liver strips and cook, stirring constantly until the liver changes color 3-4 minutes or so.
Add back the onions then add the parsley and cook for another 2-3 minutes stirring constantly, season with salt and pepper before serving.
Warm crusty bread and further drizzle of olive oil and you have a really nice starter. If you like this type of food try the sausages meal, you will love it.

This recipe is absolutley worthwhile. However there is a slight mistake – near to the end you should be adding the onions back not the liver (otherwise it’ll be a just liver dish).
I’m new at eating liver and this dish is just a winner.
Creative cooks can even play around with it a bit.
