This is a really tasty healthy meal that is so versatile you will use it often. Warm or cold it’s great, leftover beef roast or rare sirloin, it’s simple and serioulsy good. It’s really all about the dressing!

What you need

Meat finely sliced for 4 (500g should do it)
1 Cubed cucumber
2 Cubed tomatoes
Soft greens like the mixed salad leaves pack
Whatever else you fancy

The dressing

50ml lemon/lime juice
5cm piece of ginger finely grated
30ml soya sauce
3 finely chopped spring onion
1 red chili finely chopped
pinch of salt
150ml Olive oil

The process

Add all of the dressing ingredients together, give them a good whisk and set them aside.

Place soft greens on each plate and scatter the rest of the salad ingredients over the top.

Finely slice your meat (always remember to cut across the grain of the meat with a very sharp knife)

Lay the meat over the salad and spoon over the dressing.

Done!

I have used cold boiled potatoes in the salad before to give it more substance and it was great. The point is, add whatever you enjoy to the salad and be liberal with the dressing.

    Great I love salmon but I do battle cooking it myself so I get my fix by going out for sushi!!!! So I look forward to them.

    Thanks Kim, That’s the idea, slowly lead you all to a slimmer place. I have been experimenting with some great salmon dishes which will be coming in the next few weeks.
