Traditional Meatloaf

Meat loaf is a really great way to use mince meat, be it beef, lamb or a combination of beef and pork. This recipe use beef and pork sausage meat for some extra flavor which makes all the difference.

What you need

1kg beef mince
500g pork sausage meat
1 tablespoon butter
1 large onion finely chopped
2 celery sticks finely chopped
3 cloves garlic minced
1 large carrot grated
1 tin peeled chopped tomatoes
1 cup bread crumbs
2 eggs beaten
1 teaspoon ground black pepper
1 teaspoon salt
palm of fresh chopped parsley

Tomato sauce

The process

Fry the onions, garlic, parsley and grated carrot on a medium heat in the butter until soft, about 10 minutes.

Place in a large bowl and add all of the rest of the ingredients. Mix well to evenly distribute all of the vegetables in the mince meat.

Lightly grease a bread tin and mould the mixture into the tin.

Bake at 180 Celsius for 1 hours, then cover the top with a thin layer of tomato sauce and bake for a further 30 minutes.

Let it cool for about 10 minutes before turning out to serve.

Serve with mashed potatoes and rich gravy.

    I topped it with 60ml tomato sauce mixed with 60ml brown sugar and 1 1/2teaspoon of mustard.

    So glad you are enjoying Abasia, No it won’t make any difference to the end result, I just like to mix it up a little, the sausage meat adds to it for me!

    I LOVE this website! Can the pork sausage meat be replaced with something else? Will it change the end result drastically if I only use the beef mince? Looking forward to your response.
