Quick healthy dinner |

easy-stirfryWhen you want a really quick, healthy and tasty meal, try this one. I had a late day in the office, stopped off at PicknPay on the way home and got myself a packet of bacon and a packet of pre-cut stir fry mix. It turned out really well and is in the new section of cooking for one which it seems I am going to be doing a fair amount of in the near future.

What you need

1/3 packet bacon chopped
3 handfuls of mixed stir fry
Squirt of sweet chili sauce (about 2 or 3 tablespoons)
Salt and black pepper
Potato or pasta

The process

In a wok or frying pan on a medium heat, cook the bacon pieces with a knob of butter or a little oil. I like to use butter for the flavor.

Toss in the 3 handfuls of vegetables, increase the heat and stir fry until done. Here I put the lid on the pot for the first 2 minutes to ensure that the vegetables soften a little.

Add a good grind of black pepper and a pinch of salt, then add the sweet chili sauce and give it a good mix to distribute the sauce.

Serve with a baked potato or pasta.

To have a quick baked potato, put the oven on 200 Celsius before you start, pop the potato in the microwave for about 3 minutes or so on high(ensure that you prick it with a fork all over first). Then, when you are about to start cooking, p[lace it in the oven, it will be done and the skin slightly hardened when you remove it.

    Hi Graham,

    How you doing, this was lovely, Pick’nPay does have a serves 2 range which is new, try them out, you may only get it in the bigger stores tho. However many times having food for 4 means you can freeze portions for the days that you reallllly are tired and dont feel like the ritual of feeding yourself! store it in the steam bags(Jiffy
    ) i think it is and its like you just made it!

    A Cooking for One section will be great. I am always looking for something quick to make after work, as I live by myself and get quite frustrated having to follow a recipe only to end up with food for 4.
    Now if only they could package the ingredients in smaller packages!

      Thanks Mark, will keep going on the recipes for one. Yea, you would have thought smaller packages would be a standard. Spend time in the fruit and veg and just take one or 2 of each thing, meat and chicken freeze so that’s not an issue.

    I definitely like the idea of a new section “Cooking for One”. I stay during the week in a small flat in Randburg on my own and go home to the Free State to my husband over weekends. I am usually tired and then don’t feel much about cooking a healthy meal for only one person, but something small, one pot/pan including microwave/convention oven is great!!! Will be looking forward to some more recipes.

    I think a “cooking for one” section is a brilliant idea. I’ve been reading your recipes for a couple of weeks and trying them out. But I struggle to reduce them so that they are enough for just me.
