Malva pudding improved |

Don’t let winter pass without enjoying this outrageously decadent and delicious malva pudding at least once!

What you need

1 cup castor sugar
2 eggs
1 tablespoon smooth apricot jam
1 and a quarter cups cake flour
1 teaspoon bicarbonate of soda
pinch salt
2 tablespoons butter
1 teaspoon vinegar
Half cup milk

Sauce

1 cup cream
Half cup butter
Half cup sugar
Half cup water

The Process

Beat the castor sugar and eggs until light and fluffy with an electric beater. Beat in the apricot jam.

Sift dry ingredients THREE TIMES.

Melt the butter and add it to milk and vinegar.

Fold milk mixture and dry ingredients alternately into egg mixture.

Pour the batter into a greased casserole dish. Bake at 180 degrees Celsius for 45 minutes.

Melt the sauce ingredients together and pour over the pudding as soon as it is taken out of the oven. Pierce the pudding with a fork to help it absorb all that delicious sauce.

Serve hot with double thick cream or custard.

    I made this yesterday as an end to our Father’s Day lunch and what a hit it was. Really ladies and gents you need to make this. Your guests will be so impressed. And the best part of it all is even a novice can attempt this recipe with promising results. I served it with whipped cream……delish….Thanks so much Graham.

        Hi graham was wondering how many does this feed have a regte south african winter party and want to serve malva pudding oh and do you think a mixture of amarula and kalua would work in this recipe, need recipe to serve at least 20.
        Please help very very urgent party is on saturday 14th november so i only have a few days left.
        Really desperate.

          Hi Lindy, this will do for 8 people for a party of 20, make two you always have a few that only do very little dessert or no dessert. Add Kahlua or Amaru;a to the sauce in small amounts, tasting as you go along, I am sure it will work just fine. Test a batch of sauce a day or two before. G
