paprika has got to be one of my favorite spices and I use a sweet smoked paprika for this recipe but regular paprika is close, I love the smoky flavor and its a little spicier. This is another winter warmer recipe.
What you need
8 skinless chicken thighs
60ml cake flour
salt and pepper to taste
1 chicken stock cube
1 tablespoon paprika
1 medium onion finely chopped
1 large tin tomato puree (400g)
60ml plain yoghurt
The process
Mix the flour, generous amount of salt and pepper, paprika and crumbled stock cube into a plastic bag.
Place the chicken pieces in the bag and shake it about for a minute or so until they are nicely coated.
Quickly brown the chicken in a hot pan, then add the chopped onion and continue frying for about 3-4 minutes moving lt around constantly.
Reduce the heat, add the tomato puree, cover and simmer for 40-50 minutes on a low heat stirring every 10 minutes or so.
Just before you serve, add the yoghurt and give it a good stir.
This is a really delicious winter dinner that I usually serve with mashed potato(I am a fan of mash) and broccoli which has been quickly steamed and then stir fried in butter with salt amnd pepper.
