Having seen broad beans in the supermarket lately, I decided to try them out and was really amazed at the fresh flavor, unlike any beans I have ever tasted and really enjoyed this meal. Good for 4-5 people
What you need
5-6 chicken breasts sliced thinly
1 teaspoon paprika
1 onion finely sliced
2 teaspoons crushed garlic
2 tomatoes sliced (remove the seeds)
3 tablespoons (approx 1 50g packet) tomato puree
125ml chicken stock
500g fresh broad beans
Palm of ripped fresh basil
Olive oil
The process
Add a generous amount of olive oil to a hot pan, add the paprika and mix around to flavor the oil. Add the chicken in batches and cook through, removing the done batches.
Add a little more oil and add the onion and garlic and stir fry for about 2 minutes, tossing constantly. Add the tomatoes and broad beans and toss to heat them through. Add back the chicken and the stock an d bring to a boil. Remove from the heat, add the basil leaves, stir and serve.
That’s it, really tasty and a nice flavor change.
Serve with rice or use as a filling with fajitas.
