Easy Chicken Ala King

Debs asked for a chicken ala king recipe and this one worked out very well. Enjoy! Great chicken ala king recipes are so good to have in your recipe collection, a good chicken ala king recipe never fails to be enjoyed by all. 4-6 people.

What you need

1 Onion finely chopped
100g mushrooms sliced
2 Tablespoons) flour
1 ½ cups Milk
200ml chicken stock
500g poached chicken in bite size pieces
splash of cream
Salt and pepper
1 red or green Pepper chopped
2 tablespoons sherry(if desired)
3 tablespoons butter for frying

The process

In a pan on a medium heat, add butter and a little oil and cook the onions, peppers and mushrooms until soft. Add the flour and cook for a minute or two stirring constantly.

Remove from the heat, add the milk slowly and stir constantly, add the stock, bring to the boil and stir until smooth and quite thick.

Add the chicken and cream(not essential) and season with salt and pepper and finally, if you want the sauce really rich add the sherry and combine it all.

Serve with pasta or rice.

    I am a new cook, please can you tell me how you should poach the chicken? I saw this: “Poach chicken in a large pan of simmering water for 6-8 minutes or until almost cooked through and then drain” on another recipe but since it’s for chicken thighs I wasn’t sure I should follow the same directions.

    I tried your recipe, but the milk separated. I used fresh chicken. Cannot think what I did wrong, as all the others had great success!

    I wanted to serve this as breakfast at my guesthouse.

      Sorry to hear that Neel, I can only imagine you added the milk too quickly. It is really important to stir constantly while you add the milk slowly.. Happy new year G
