Chocolate biscotti
A chocolate biscotti recipe that anyone can make. Biscotti make excellent gifts, so get the kids involved making choclate biscotti for Christmas gifts, birthday gifts or just make someone happy. These are really sublime and are baked as a single loaf then cut and rebaked to crisp them up.
What you need
300g chocolate
25g butter
225g self raising flour
50g light muscovado sugar
2 eggs
1 teaspoon vanilla essence
100g chopped pecan nuts
The process
Lightly grease a baking sheet and heat the oven to 190 celsius.
Chop 100g of the chocolate into small pieces and set aside. Melt the rest of the choclate and the butter over a low heat then leave to cool.
Sift the flour into a mixing bowl, add the sugar, eggs, vanilla essence, nuts and chocolate mixture and mix together.
Finally add the chopped chocolate and mix to form a dough.
Split the dough into 2 and shape into a log about 25cm long. Place well apart on the baking tray and bake at 190 celsius for 18-20 minutes until risen, golden and firm.
Remove from the oven and reduce the heat to 160 celsius.
After the logs have cooled for about 15-20 minutes slice the logs into 2cm slices (serrated knife works best) Place them back on the baking tray and bake for another 15 minutes. They will be crisp and delicious.
